Using a Tupperware MicroGourmet Steamer, place the lamb shanks in the colander base, fill the water tray to the maximum fill line, cover and microwave @900 watts for 30 minutes.
In a medium cup, poor in 50ml of hot water and dissolve your lamb/beef stock.
Once the lamb shanks have been steamed, using a That's A Bowl 3L mix the flour and Smokey rub spice together. Place the lamb shanks in the flour and spice mixture and coat thoroughly. (Do not throw the leftover mix away, you’ll need it later).
In the Tupperware Microwave Fast Cooker, place the dissolved beef stock, onion, carrots, garlic, rosemary, tomato paste, wine, water and black pepper. Mix well.
Place the coated lamb shanks into the content of the Tupperware Microwave Fast Cooker, cover and microwave @900 watts for 30 minutes.
Remove the Fast Cooker from the microwave. Once the pressure valve subsides, open the Tupperware Microwave Fast Cooker, remove the lamb shanks and place them aside.
Using a KPT Whisk (or similar whisk), whisk in the remaining flour and spice mixture thoroughly.
Place the lamb shanks back into the Microwave Fast Cooker, cover and microwave @900 watts for a further 30 minutes.
Remove the Fast cooker from the microwave. Once the pressure valve subsides, open the Fast cooker, serve the lamb shanks with mashed potato, and enjoy.
