Preheat oven to 180 degrees Celsius.
Cut the carrot into chunks and grate using the Speedy Grater.
In a That’s A Bowl, add the grated carrot, flour, sugar, cinnamon, all spice, vegetable oil, vanilla extract and eggs and mix well.
Add the mixture into the Tupcakes Silicone Baking Form cavities (half-full). Bake at 180 degrees for 20 minutes.
Remove from oven and allow to cool.
For the frosting: In a separate That’s A Bowl, add the cream cheese, butter, icing sugar and mix well.
Using a silicone spatula spread the icing onto the baked cupcakes and sprinkle the chopped pecans on top.
