Microwave Potato Salad
Place peeled and cut potatoes into the Microwave Rice Maker along with the eggs.
Fill the water to the maximum fill line.
Place on the separator and cover. Microwave at 900 watts for 10min.
Remove the eggs and continue to microwave the potatoes for another 8 min.
Once cooked, drain the water and allow the potatoes to cool.
Peel and quarter the boiled eggs.
In a serving bowl, place the potatoes, eggs and mix in the mayonnaise and parsley.
- 5 medium potatoes
- 3 eggs
- 3 tbsp mayonnaise
- 2 ml salt and pepper (to taste)
- 1 tsp chopped parsley
