Cucumber, Lemon & Couscous Salad

Instructions


  1. Place couscous and water into the base of the Microwave Rice Maker Large, place Insert and Cover on base. Microwave for 10 min at 900 watts. 

  2. While the couscous is cooking, finely dice the cucumber. 

  3. Add parsley, lemon juice, olive oil, salt, pepper and garlic powder to the Herb Chopper, and then pull cord to combine.

  4. When the couscous is done cooking, drain if any water remains. 

  5. Add mixture from the Herb Chopper and feta cheese to the Couscous. Mix until evenly coated, and serve warm.

  • 140 g couscous (uncooked) (± 1 cup)
  • 700 ml water (± 3 cups)
  • 1 medium cucumber (165 g)
  • 1/4 bunch parsley
  • 15 ml lemon juice (± 1 tbsp)
  • 30 ml olive oil (± 2 tbsp)
  • 1 ml garlic powder (± 1/4 tsp)
  • 140 g feta cheese (± 1/4 cup)
  • Salt and pepper to taste
