Bobotie Pancakes

Instructions


  • For the bobotie mince, heat the oil in a frying pan and add the onions. Fry for 1 minute to soften.

  • In a That's a Bowl mix the mince, curry powder, salt and pepper and turmeric. Add to the onions and brown for 5 minutes.

  • Add the chutney and water and cook for another 10 minutes. Adjust seasoning and set aside.

  • For the pancakes, grease a non-stick pan with oil.

  • Add the flour, milk, egg and salt to a Quick Shake and shake well to form a batter.

  • Pour some batter into the pan, swirl and cook for 2 minutes on each side.

  • Spoon bobotie mince into the pancakes, roll and place on a serving plate. Scatter with fresh herbs and grated cheese before serving.

Bobotie Mince

  • 1 tbsp oil
  • 1 onion
  • 1/2 tsp curry powder
  • 1/2 tsp turmeric
  • 500 g beef mince
  • salt and pepper
  • 2 tbsp chutney
  • 4 tbsp water
  • grated cheese for serving

Pancakes

  • 1 cup flour (250ml)
  • 1 cup milk (250ml) - add additional if the mixture is too thick
  • 1 egg
  • pinch of salt
