Carrot Cupcakes

Instructions


  1. Preheat oven to 180 degrees Celsius.

  2. Cut the carrot into chunks and grate using the Speedy Grater.

  3. In a That’s A Bowl, add the grated carrot, flour, sugar, cinnamon, all spice, vegetable oil, vanilla extract and eggs and mix well.

  4. Add the mixture into the Tupcakes Silicone Baking Form cavities (half-full). Bake at 180 degrees for 20 minutes.

  5. Remove from oven and allow to cool.

  6. For the frosting: In a separate That’s A Bowl, add the cream cheese, butter, icing sugar and mix well.

  7. Using a silicone spatula spread the icing onto the baked cupcakes and sprinkle the chopped pecans on top.

  • 150 g all-purpose flour
  • 75 g white sugar
  • 75 g brown sugar
  • 1.5 tsp cinnamon
  • 1.5 tsp all spice
  • 120 ml vegetable oil
  • 2 ml vanilla extract
  • 3 eggs

Frosting:

  • 200 g cream cheese
  • 85 g butter
  • 1 cup icing sugar
  • 40 g pecans
